RAJMA / KIDNEY BEANS BIRYANI
1. 300 gm soaked rice (15 minutes)
2. 6 baby potatoes (peeled)
3. 4 chopped onion
4. 1 tblspn ginger garlic paste
5. 2 paste of tomato
6. 2 green chillies
7. 2 bay leaves,some whole garam masala,jaitri,black pepper
8. 8-10 kabab chini,
9. 2 tblspn curd
10. 1 tblspn biryani masala
11. 1 tspn turmeric powder
12. 1 tspn kashmiri red chilli powder
13. oil 3 tblspn
14. 2 tblspn ghee
15. 1/3 tspn cumin & fennel seeds
16. 1/2 tspn kewra water
17,. 1/2 tspn rose water
18. 1 drop of mitha attar(food essence)(optional)
19. some saffron milk
20. water as needed
21. salt to taste

Step 1 :
Wash the rice and soak it for 15 minutes.Drain the water from the rice.Now boil the rice 80% with whole garam masala and after straining it keep aside.Take a pan and fry the onion golden brown,take them out of the pan,keep aside to.Take same pan & after heating it give oil & let it heat up.Fry the potatoes golden with little turmeric & red chilli powder & take them out.
Step 2 :
Now take the pan and Give some oil & ghee,let it melt.Add bay leaves and whole garam masala, cumin seeds,fennel seeds & stir for few seconds.take a bowl,add all the masala including curd and mix it well.When the aroma comes add masala paste.Mix it for 2 minutes on medium flame,you can cover it with a lid.
Step 2 :
Now add green chilli and tomato paste,stir it for another 2 minutes.Give fried potato and mix it for 2 minutes.Now add little water and mix it.Sprinkle rose water,kewra water,ghee & fried onion on it.Now Add cooked rice and sprinkle on it kewra water,rose water,fried onions,ghee,saffron milk.Add 1 cup of water from the sides.Now cover the lid of the pan,and cook it on an iron tawa for 20 minutes on medium flame.
Step 3 :
After 20 minutes on medium flame open it.Add little sweet attar in every sides.Here our super tasty & shahi Restaurant style aloo dum Biryani or aloo biryani ready & I served it hot with chilled special raita.
