Ingredients : 1. 250 gm all purpose flour / maida 2. 50 gm oil 3. 1 tablespoon baking soda 4. some flour / maida 5. 1 teaspoon black caraway seeds / kalonji 6. 1 teaspoon dry roasted carom seeds 7. salt to taste or 1 teaspoon 8. oil to fry
Method : Dough Preparation :
1. Add all the ingredients in the maida and mix it properly for 10 minutes with little water.Knead it into stiff dough.Make sure the dough should not be too stiff or too soft .Cover it with a lid for at-least 15-20 minutes .
Nimki Preparation : 2. Take a big portion of dough like orange and roll it some into round shape & flatten the dough like normal chapati.But it will be very thinner than regular chapati.Make sure that the centre and the corner portion of it should be equal thin.Now cut it like a nimki shape with the help of a knife.And prepare all the nimkis. Nimki Fry :
3. Turn on the gas and take a pan on it.Heat the pan for 2-3 minutes on medium flame.Give oil in it and heat the oil to fry the nimki.Now give the nimkis and fry them until golden from both sides.Take them out from the pan and keep it on a tissue paper.
