           Navratan Pulao

          Amritsari Aloo Kulcha
Ingredients : 

 

                        1. 200 gm paneer (cube sized)
                        2. 2 medium sized chopped onions
                        3. 3 chopped tomatoes
                        4. 1 sliced capscicum
                       5. 3 slit green chillies
                       6. 5-6 pieces of garlic
                      7. 1 tablespoon ginger paste
                      8. 1 tablespoon mixed pickle
                      9. some fresh coriander leaves
                     10. 1/2 teaspoon coriander seeds
                    11. 1 teaspoon cumin seeds
                    12. 1/2 teaspoon fennel seeds
                    13. 1/4 teaspoon fenugreek seeds
                    14. 2 dried red chillies
                    15. 1 teaspoon turmeric powder
                    16. some whole garam masala
                    17. 1 teaspoon cumin powder
                    18. 1 teaspoon kashmiri red chilli powder
                    19. 1 tablespoon sugar
                    20. some dried fenugreek leaves
                    21. 1/2 teaspoon mustard seeds
                    22. 3 tablespoon mustard oil



Method :

 

               Step 1 : Heat kadai and give cumin seeds,fennel seeds,red chillies, garam masala,methi,kasuri methi and dry roast it. Grind it into mixture grinder and make a powdered masala.


              Step 2 : Take the pan and give some oil. Add onion and garlic on the hot oil and fry it for 2-3 minutes.Add ginger paste,tomatoes, green chillies and some salt, stir it .Cover it with a lid.After 3-4 minutes open the lid and make a sauce into a mixture grinder with adding some water.


            Step 3 : Now on a hot pan give remaining oil and add cumin seeds and mastard seeds,stir it.Add capscicum and fry it little.Add the special sauce with dash of water and mix it.Add turmeric,red chilli powder,special masala (1 tablespoon ),salt and mixed achar,stir it.Cover it for 5-6 minutes on medium flame.Open the lid and now add sugar and the paneer.Stir it very carefully.Spread coriander leaves in the paneer gravy and lightly stir.Cover it for 3-4 minutes and serve the dish.Here our ready easy and perfect Achari Chatpata Paneer masala.Serve it hot with kulcha ,paratha or jeera rice…Enjoy your dinner….🌝
