At first take oil in a pan and add jeera and diced potatoes and saute for a while. Then add sliced onions and ginger-garlic paste and cook for few minutes. After 2 minutes add all the powdered masalas, green chillies, salt to taste and cook by covering the pan.
After a minute add grated tomatoes and curd and mix with the potatoes. Cook all the things by covering the pan for few minutes till oil gets separated from the gravy. After that add all the diced eggplants(baingan) and mix them properly with the masalas. Cook it by covering the pan again till the eggplants gets soft. You can sprinkle a little water to ease the cooking.
After a few minutes when all the eggplants gets soft and potatoes are properly cooked add garam masala powder, lemon juice and chopped coriander leaves. Mix well and its now ready to serve.
