1. 3 Boiled Potatoes
2. 1 tbsp Oil(for stuffings) + Oil to fry the Bondas
3. 1/2 tsp Jeera
4. 1/3 tsp Hing
5. 2 Chopped Green Chillies
6. 10-12 Curry Leaves
7. 1/2 tsp Grated Garlic
8. 1 tsp Grated Ginger
9. 1 Chopped Onion
10. 1/2 tsp Turmeric Powder
11. 1/2 tsp Kashmiri Red Chilli Powder
12. 1 tsp Coriander Powder
13. Salt to Taste
14. 1/3 tsp Garam Masala Powder
15. 1 tsp Lemon Juice
16. Chopped Coriander Leaves
For Batter :
17. 1 Cup Besan
18. 1/3 tsp Ajwain
19. Salt to Taste
20. 1/2 tsp Kashmiri Red Chilli Powder
21. Water as Required


At first take some oil in a pan. Then add jeera, hing, green chillies and curry leaves on it and saute for a while. The use of curry leaves in this recipe is crucial. The add grated garlic and ginger and again saute for a while. Then add chopped onion and all the powdered masalas except garam masala and stir fry again. After a few minutes add the boiled potatoes and mix verey well with the masalas. Then add salt to taste and garam masala powder and give a mix. At the end add little lemon juice and coriander powder and here our super tasty stuffings for the bonda is ready. Now cool off htis mixture for a while and make round shaped balls from it. Make as many as you can from the entire mixture and keep them aside.

Now we shall make the batter. Take besan in a bowl and add ajwain, salt to taste, kashmiri red chilli powder and water as required and mix till a semi thick batter is prepared.

Now heat sufficient amount of oil in a kadai. And coat the balls that we had prepared in the batter and release them in the oil. Fry as much as you can at a time. Fry them till they are golden and crispy. When done take them out on a serving platter and serve them with green chillies and any sauce of your choice.
