Ingredients : –
                         1. Florets of 1 cauliflower
                         2. 2 medium sized potatoes(cut into dices)
                         3. Puree of 3 tomatoes
                         4. 2 tablespoon curd
                         5. 1 tablespoon grated ginger
                         6. 2 chopped green chillies
                         7. 1/2 teaspoon cumin seeds
                         8. 1/2 teaspoon turmeric powder
                         9. some dry roasted fenugreek leaves
                        10. 1/2 teaspoon garam masala powder
                        11. 1/2 teaspoon kashmiri red chilli powder
                        12. 1/2 teaspoon cumin powder
                        13. 1 teaspoon coriander powder
                        14. 3 bay leaves, some whole spices, 6-7 raisins, 2 dry red chillies
                        15. Salt or to taste
                        16. 1/2 teaspoon ghee
                        17. 3-4 tablespoon mustard oil

                        18. Chopped coriander leaves 

                        19. 1 Cup Water

 

 

Method : –
                  Step 1 : Fry the gobi(cauliflower) and aloo till golden on hot oil for 4-5 minutes.You can cover the lid during frying.Take them out from the pan and keep aside.Now give bay leaves,whole garam masala,raisin,grated ginger,cumin seeds,and green chillies.Saute them for 2 minutes.Now add tomato puree mixed with paste of one dry red chilli and stir well. Also add slit green chillies. Cover the lid for 5-6 minutes on medium flame.

                 Step 2 : After a while add all the powdered masalas and curd by lowering the gas flame. Mix it well and cook  the mixture for another 3-4 minutes. When the mixture starts to release oil add chopped coriander leaves and  fried gobi and aloo . Mix them properly with the masala so that all the gobi pieces are well-coated with masala. Now add water as required and leave it to cook for 10-12 minutes on medium flame. After that when the gravy gets a bit thick add garam masala powder, ghee and kasuri methi. Mix all of them well and leave it by covering the lid for 2 more minutes.`

                         Here our super tasty and delicious Aloo Gobi Masala is ready. Enjoy the dish with roti, paratha or steamed rice.
