Ingredients:
1. 400 gm. Boiled Aloo
2. 3 tbsp Mustard Oil
3. 2 Bay Leaves
4. 2 Dry Red Chillies
5. Whole Spices
6. 1 tsp Jeera
7. 1/2 tsp Saunf Powder
8. 1 tsp Grated Ginger
9. 2 Chopped Green Chillies
10. 1/2 tsp Hing
11. Puree of 3 Tomatoes
12. 1/2 tsp Turmeric Powder
13. 3 tbsp Cashew Paste
14. 1 tsp Coriander Powder
15. 1/2 tsp Roasted Cumin Powder
16. 1 tsp Kashmiri Red Chilli Powder
17. Salt to Taste
18. 4-5 tbsp Paste of Coriander Leaves
19. Some Garam Masala Powder
20. 1 tsp Lemon Juice
21. Some Ginger Juliennes
22. Chopped Coriander Leaves
23. Water as Required

Method

At first peel off the boiled potatoes and cut them off in medium sizes. Then heat some oil in a pan and add bay leaves, dry red chillies, some whole spices, jeera, saunf powder and some grated ginger and saute all the things for few minutes. After a while add green chillies, hing and tomato puree and cook it for 2 minutes till it releases oil. After that add some turmeric powder and cook it further.

Then add cashew paste. This will make this dish special. Then add all the powdered masalas and salt to taste, mix well and then add the special coriander paste. Mix well with the gravy and cook it for few more minutes by covering the pan. After a few minutes add the boiled potato pieces and mix well with the gravy. Add some garam masala powder, some lemon juice and some ginger juliennes to spice up the things. Cook it further by adding a little water till it releases more oil on top. At last add chopped coriander leaves and mix to finish it up.
