Ingredients:

For Dough :
1. 2 Cup Atta(Wheat Flour)
2. Salt to Taste
3. 1 tbsp Ghee
4. Water as Required

For Stuffings :
5. 4 Boiled Potatoes
6. 1 tsp Kashmiri Red Chilli Powder
7. 1 tsp Coriander Powder
8. 1/2 tsp Chaat Masala
9. 1/3 tsp Garam Masala Powder
10. 1 tsp Grated Ginger
11. 2 Chopped Green Chillies
12. Salt to Taste
13. 1/2 tsp Black Salt
14. Chopped Coriander Leaves
15. Some Ajwain
16. Some Chopped Onion
17. 2 tbsp Maida
18. Some Oil to Fry

Method

Step 1 : First of all we will make the dough. In a bowl take wheat flour(Atta), salt to taste, some ghee and required amount of water and start kneading the dough. Knead it to make a soft and fluffy dough. because that is necessary for making a soft paratha. When done cover it with damp cloth for 15 minutes for rest.

Step 2 : In the mean time let’s make the stuffings for the paratha. Boil 4 potatoes and at first grate them to avoid lumps. Now add all the dry masalas, ginger, salt, some black salt, some ajwain for that exquisite taste, some chopped onions and some maida to soak all the remaining moisture from the stuffings. Now mix all the things together to make a mixture.

Step 3 : Now get back to the dough. Knead it a for a while again and now we shall stuff the parathas with the stuffings. Take a generous portion of dough and at first roll it round and then flatten with fingers. Now take some amount of the stuffings that we just made and place it on the paratha. Now close all the corners of the paratha and after the closure flatten it again so that the stuffings distributes everywhere inside. Now roll with the help of a roller in your desired shape. Don’t panic if the stuffings comes out in some places. It will make the parathas more tasty. Make all the parathas in the same way.

Step 4 : When all the parathas are ready, take a iron tawa and heat it. When hot place one paratha above it and roast it from both sides till the colour changes a bit. Then add very little amount of oil from the sides and fry the parathas till golden from both the sides. Make all the delicious parathas in the same way.
