Spicy Aloo Ki Sabzi

Ingredients :
1. 3 Boiled Potatoes
2. 2 tbsp Oil
3. 1/2 tsp Jeera
4. 1 Dry Red Chilli
5. Paste of 2 Onions
6. 1 tbsp Grinded Ginger & Green Chillies
7. Paste of 2 Tomatoes
8. 1/2 tsp Turmeric Powder
9. Salt to Taste
10. 1 tsp Special Masala(Mixture of 1/3 tsp Jeera, 1/3 tsp Saunf, 1/2 tsp Dhania & 1/4 tsp Ajwain)
11. 1/3 tsp Hing
12. 1/2 tsp Garam Masala Powder
13. 1/2 tsp Amchur Powder
14. 1/2 tsp Sugar
15. 1 tsp Kashmiri Red Chilli Powder
16. 1.5 Cup Water
17. Kasuri Methi
18. Chopped Coriander Leaves(for garnishing)


At first boil 3 potatoes and then peel them off partially and cut in square sizes. Keep it aside. Now take a pan and add oil. Heat it up. Now add jeera, dry red chilli, onion paste and grinded ginger & green chilli. Now saute all these things for a while. After that add tomato paste. Then add turmeric powder and salt to taste and cover the pan for a while.

In the meantime we shall prepare the special masala. This masala is the main flavouring agent of this recipe. Dry roast jeera, saunf, dhania and ajwain together for a while and grind them in a mixer to make a flavourful special masala. Now uncover the pan and add that special masala, hing, garam masala powder, amchur powder and little sugar and mix all of them. Now add kashmiri red chilli powder and mix. Then add little water and put all the boiled potato pieces and mix properly with the masala. Now add 1.5 cup of water and cover the pan for 4-5 minutes. After that add kasuri methi and check if the curry has reached the perfect consistency. On the other hand fry puris as much as you want. And at last serve the sabzi garnished with chopped coriander leaves and Puri. Taste both of them at the same time and feel the amazing flavour and taste.
