Recipe Type : One Bowl Meal

Ingredients:
1. 250 gm. Gobindobhog Rice
2. Whole Spices with Javitri & Jaiphal
3. 1 tsp Grated Ginger
4. 1/2 tsp Turmeric Powder
5. 2 tbsp Ghee
6. 3 Bay Leaves
7. 7-8 Green Cardamom
8. 8-10 Cloves
9. 2 pieces Cinnamon
10. 25 gm. Cashew Nuts
11. 25 gm. Raisins
12. Water as Required
13. Some Mawa/Kheer
14. Salt to Taste
15. 1.5 tbsp Sugar

Method

At first we will wash and rinse the gobindobhog rice and then soak it for a while in fresh water. In the meantime grind some whole spices along with some javitri(mace) and jaiphal(nutmeg). Now we shall marinate the rice. This marination process will enhance the taste of the pulao a lot. At first strain water from the rice and then add the special ground spice, some grated ginger, little turmeric powder(or some saffron milk) and some ghee into it and mix the rice with all of these properly. Now keep it aside.

Now heat some ghee and oil together in a kadai. The use of ghee is a must. Now add bay leaves and some more whole spices, some cashew nuts and raisins and saute them for some time. Immediately after add the marinated rice in the kadai and mix well with the spices. Stir fry the rice for a while in medium flame. Then add lukewarm water(double in quantity of the rice) to the rice and mix well with the rice. Now add some crushed mawa/kheer into it. This will make the pulao more rich in taste. Add salt to taste and cover the pan with lid and cook it for 7-8 minutes.

After 7-8 minutes you will see that the rice have soaked the water. But it has not been cooked completely. At this moment add sugar to it and cover the pan again for 5 more minutes. After 5 minutes our rich, tasty and flavourful Basanti Pulao is ready to serve. You can serve this amazing dish with Kashmiri Dum Aloo, any type of Paneer dish or any other side dish of your choice.
