1. 4 tbsp Mustard Oil
2. 2 Dry Red Chillies
3. 1/2 tsp Jeera
4. Some Mustard Seeds
5. 1 tbsp Grated Ginger & Garlic
6. 2 Sliced Potatoes
7. 600 gm. Bhindi(Lady Finger)
8. 1/2 tsp Turmeric Powder
9. 1/2 tsp Hing
10. 1 Chopped Onion
11. 1 Chopped Tomato
12. Onion Petals
13. 1 tsp Coriander Powder
14. 1 tsp Roasted Cumin Powder
15. 1/2 tsp Kashmiri Red Chilli Powder
16. Salt to Taste
17. Chopped Coriander Leaves
18. 1/2 tsp Garam Masala Powder
19. 1 tsp Amchur Powder
20. Some Sprinkled Water

At first heat mustard oil in a kadhai and when it is hot put 2 dry red chillies, jeera and mustard seeds in it. Let it saute and then add grated ginger and garlic and fry for a while. After that add sliced potatoes in the oil. Fry the potatoes for 2 minutes till they are mildly fried. Then add the sliced bhindis along with some turmeric powder and mix all the things together. Now we shall fry the bhindis by covering the pan for few minutes on medium flame.

After few minutes when the bhindi gets a little soft add hing, chopped onion and chopped tomatoes and stir fry for a while. Then cover the pan once again and let it cook. After that to make the dish more interesting add some onion petals. Don’t fry them completely so that they remain crunchy. Immediately after add coriandr powder, cumin powder, red chilli powder and salt to taste and mix all the things together. Now lets cover the pan once again for 1-2 minutes. After that add some chopped coriander leaves, garam masala powder and some amchur(dry mango) powder for that little tangy flavour. Mix well by sprinkling some water.

Here our Spicy, Tangy and Super Delicious Bhindi Do Pyaza Masala is ready to serve with steamed rice, roti or paratha.
