Bhindi Do Pyaza is a very special type spicy curry of bhindi.I have prepared it in restaurant style but in low oil. It goes perfect with Roti,Paratha. It is an ideal dish for your lunch or dinner.Making this Bhindi Masala is very easy & simple.

Ingredients :

1. 500 gm bhindi(okra)
2. 2 onion petals
3. 1 square cut tomato
4. 3-4 bay leaves
5. 1 tspn cumin seeds
6. 1 inch ginger julienne
7. 3-4 slit green chillies
8. 2 chopped onions
9. 1 chopped tomato
10. 1/2 tspn turmeric powder
11. 1/2 tspn coriander powder
12. 1/2 tspn cumin powder
13. 1/2 tspn kashmiri red chilli powder
14. 1 tomato paste
15. 2 tblspn yogurt
16. chopped coriander leaves
17. 1/3 tspn garam masala
18. 1 tspn lemon juice
19. water 4-5 tblspn
20. 5 tblspn mustard oil

 

: Method :

                       * At first heat a pan and take mustard oil in it and start frying Bhindi in it. We have to fry the bhindi almost 80% by stirring it for around 4-5 minutes. When done take the fried bhindis out on a platter. Then in the same oil we’ll saute onion petals for 1 minutes. Then add squarely chopped tomatoes with the onion and saute again for a minute. Now take both the onion & tomato out and keep aside for later use.

                       * Now heat some more oil in the pan and saute bay leaves and cumin seeds for a few seconds. Now add ginger julinnes and slit green chillies & saute for a minute. Now we’ll add finely chopped onion and fry for 2 more minutes. After that add finely chopped tomatoes and a little salt so that it fries quickly. After being sauteed for 2-3 minutes add all the powdered masalas, salt to taste and saute for a minute. After that add tomato paste and mix it well with the masalas by adding a little water. Then cover it up and cook for few minutes.

                       * After 2 minutes when the masala is well cooked add yogurt by lowering the gas flame. Stir & mix continuously for 2 minutes.Now add the fried bhindi and mix well with the masala. Then add some chopped coriander leaves, give a mix & cook it for 6-7 minutes on low-medium gas by covering the pan. Stir it in between. When it is well cooked add the fried onion petals and tomato that we had kept aside. Also add some garam masala, a little lemon juice and some more chopped coriander leaves, give a proper mix, turn off the gas and cover the pan for 2 more minutes.

                    Here, our Restaurant Style Special Bhindi Do Pyaza is ready to serve with roti, chapathi or paratha.
