At first wash all the bhindis and dry them out. Make sure that the bhindis don’t have any water. Thenm cut all the bhindis into small pieces and keep them aside. Then add mustard oil in a kadai and add jeera, grated garlic and ginger and saute for a while. Then add all the pieces of bhindis and let them fry for 3-4 minutes on medium flame by covering the pan. After that add turmeric powder and chopped onions and mix well with the bhindis. You can add onions at the beginning too.
Now we will put the masalas. Put a little hing for that exotic flavour, kashmiri red chilli powder and a special dry roasted grinded masala(comprising of roasted jeera & dhania). This spacial masala is the heart and soul of this recipe. Then add a little salt and let the sabzi cook for another few minutes. After a while check if the bhindis are soft and then add some lemon juice and some chopped coriander leaves to finish off. Give a good mix and it’s ready to serve hot.
