Ingredients :

                       1. 250 gm basmati rice(soaked for 15 minutes)
                       2. 1 finely chopped carrot
                       3. some chopped beans
                      4. 1/2 chopped onion
                      5. some chopped green & red capsicum
                     6. some chopped spring onion(white & green part)
                     7. 1 tablespoon grated garlic
                    8. 1 tablespoon grated ginger
                    9. 1 tablespoon vinegar
                   10. 2-3 chopped green chillies
                   11. 1 teaspoon black pepper powder
                  12. 1 tablespoon soya sauce
                  13. salt to taste / 1 teaspoon
                 14. 2 tablespoon oil       

METHOD 

                       Step 1 : At first wash the rice properly and soak it for 15 minutes,if you don’t want to soak it then wash it very properly.After that strain the water from the rice.

                   Step 2 : Turn on the gas flame. Take some water to boil. After boiling it add the soaked rice,little oil .Let it cook for some minutes (approx. 80% cooked) on medium flame.Be mentioned here that you shouldn’t over-cooked or under cooked the rice.After the rice gets cooked strain it and keep it in a big pan.  

                     Step 3 : Take 2 tablespoon oil in a pan and give grated garlic & stir it for 5-10 seconds.Now Fry all the vegetables little for a while.To keep the veggies crunchy don’t over-fry.

                    Step 4 : Add rice,salt, black pepper and soya-sauce .Mix them properly on high flame and toss it to assemble all the things in the pan.After tossing for 2 minutes give vinegar into the fried rice & mix well.Spread the green part of spring onion & mix well.Now turn off the gas flame.

                                 Here our super quick & tasty Chinese fried rice is ready to be served hot.
