1. 250 gm. All Purpose Flour (Maida)
2. 3 tbsp Cocoa Powder
3. 1.5 tbsp Baking Powder
4. 1 tsp Baking Soda
5. 1/2 tsp Salt
6. 1/2 tsp Cardamom + Cinnamon Powder
7. 125 gm. Powdered Sugar
8. 100 gm. Curd
9. 50 gm. Butter
10. 50 gm. Oil
11. 3 tbsp Condensed Milk
12. 200 ml. Milk
13. Chopped Dry Fruits
14. Chocolate Syrup (for decorating)
: Method :
At first take a strainer and put all purpose flour, cocoa powder, baking powder, baking soda, cardamom-cinnamon powder and salt one by one, mix them all and strain all the things to make a fine powder. Now on the other hand strain the powdered sugar and mix curd, butter, oil and condensed milk with it and give a good mix. Now add the powder mixture that we have prepared in this mixture and start whisking it to make a smooth batter for the cake. During whisking you’ll see the batter getting sticky. That’s why add milk with it in small quantities and whisk the batter continuously. Now we shall add chopped dry fruits in the batter to make the cake more tasty.
In the meantime we shall pre-heat the cooker. For that take some amount of salt inside the cooker for oven like baking. Now place a steel stand in the middle of the cooker, lock the lid and leave it to pre-heat for 10 minutes on medium flame. Don’t forget to remove the whistle. On the other hand take a round cake tin and place butter paper inside it and brush it with butter on all the sides. Now when the batter is perfectly whisked and reached a smooth consistency pour it inside the cake tin. Remember to fill the cake tin half. Because it’ll double in size after baking.Now spread some more dry fruits over the batter to bring that exotic look.
After 10 minutes when the cooker is pre-heated place the cake tin right inside the cooker carefully. And then lock the lid and leave it for 30-35 minutes for baking on medium flame. Keep the whistle removed.
After 30-35 minutes unlock the lid of the cooker and you’ll see that our super spongy & tasty Chocolate Fruit Cake is perfectly baked and has doubled in size and looking absolutely beautiful. Now we shall insert a knife inside the cake to check whether it has baked well or not. If the knife comes out clean it means that our Chocolate Fruit Cake is ready to serve. Serve the cake by decorating it with chocolate syrup.
