Ingredients :
1. 700 gm. Boiled Potatoes
2. 2-3 tbsp Oil
3. 1 tsp Turmaric Powder
4. 1/4 tsp Red Chilli Powder
5. One Bay Leaf
6. 1 Dry Red Chilli
7. Whole Spices
8. 3-4 Raisins(Kishmish)
9. 1/2 tsp Jeera
10. 1/3 tsp Hing
11. 2 tbsp Ginger-Garlic Paste
12. Puree of 3 Tomatoes
13. 1/2 tsp Coriander Powder
14. 1/2 tsp Cumin Powder
15. 1/3 tsp Saunf Powder
16. Salt to Taste
17. 1/2 tsp Garam Masala Powder
18. 1/2 tsp Kashmiri Red Chilli Powder
19. 3 tbsp Fried Onion Paste
20. Some Water
21. 1 Slit Green Chilli
22. Chopped Coriander Leaves
23. Kasuri Methi
24. Little Kewra Water

Method

At first boil the potatoes and make pores in them with the use of a fork so that the gravy goes well into them. Now heat oil in a kadhai and fry all the potatoes in it by adding turmeric powder and red chilli powder with it. When the potatoes are fried well take them all out and keep aside.

Now in the same oil add bay leaf, some whole spices, raisins and jeera and saute for a while. After that add ginger-garlic paste and saute with it. Then add tomato puree and cook by covering the pan for a while.

Now we shall prepare a special masala mixture for the recipe. Take some curd in a bowl and add all the powdered masalas mentioned in the ingredients section. Mix all of them well and then add it with the gravy that we have been preparing. Now we shall a completely new ingredient i.e. paste of fried onion. This thing will increase the taste of this recipe to a great level. Mix all of them by adding a little water and cook it for some time. After a few minutes when the oil gets separated from the gravy add water as required. Then add green chillies and chopped coriander powder and mix well with the gravy. Now its time to add the fried potatoes and mix well with the gravy. Now cook it by covering the pan for a few minutes. After a while when the gravy reaches the right consistency add kasuri methi and another unique ingredient, kewra water to bring that shahi taste to the recipe. That’s all. Our super special Dahi Aloo is ready to serve.

Here our Super Delicious Dahi Aloo is ready to serve with steamed rice, pulao, roti, puri etc. Try it once and you’ll forget the taste of other aloo sabzis.
