INGREDIENTS :

1. 400 gm. Black Lentils
2. Handful of Kidney Beans(Rajma)
3. 3 tbsp Butter
4. 2 tbsp Oil
5. 3 Bay Leaves
6. 1 Dry Red Chilli
7. 1 tsp Shahi Jeera
8. Whole Spices
9. 1 Black Cardamom
10. 2 Chopped Onions
11. 1 tbsp Grated Ginger
12. 1 tbsp Grated Garlic
13. Puree of 4 Tomatoes
14. 2 Green Chillies
15. 1/2 tsp Turmeric Powder
16. 1 tbsp Coriander Powder
17. 1.5 tsp Garam Masala Powder
18. 1/2 tsp Dry Mango Powder
19. 1 tsp Kashmiri Red Chilli Powder
20. Salt to Taste
21. Chopped Coriander Leaves
22. 3-4 tbsp Fresh Cream
23. Water as required
24. Kasuri Methi

For Tadka :

25. 1 tbsp Butter
26. Some Ginger Juliennes
27. Some Slit Green Chillies
28. 1/2 tsp Kashmiri Red Chilli Powder

 

: Method :

*  At first boil the overnight soaked Black Lentils and Rajma in twice the water inside a pressure cooker. Add a little salt while boiling. Boil the dal till four(4) whistles in the cooker. When it is done keep the boiled dal along with the stock aside for later use.

   * Now take butter and oil in a pan and add dry red chilli, cumin seeds, whole spices and black cardamom and fry for a while. Then add chopped onions and fry for 2 minutes till it turns golden. After that add grated ginger-garlic and saute for 3-4 minutes. Then add tomato puree along with slit green chillies and cook in medium flame. Now add turmeric powder, coriander powder, salt to taste and let it cook for another 3-4 minutes. Now its time to add the cooked dal along with the stock. We won’t use any extra water, rather we are using the stock of the dal to make the dish tastier & healthier. After mixing the dal well with the masalas add dry mango powder and kashmiri lal mirch powder. Now we will cook it for around 30-40 minutes on low flame. The more you cook it the better it becomes. Occasionally smash the lentils with the help of the spoon to make the dish creamy.

  * After 30-40 minutes when the dal is well cooked add grinded garam masala powder and coriander leaves. Mix it well . Now on low flame add fresh cream to make the dal tadka more creamy. In the end don’t forget to add dhaba special kasuri methi to bring that unmatched taste of dal makhni. Now when our dal is ready its time add the tadka in it. Take a tadka bowl, take some butter, 4-5 ginger juliennes, green chilli and some kashmiri lal mirch powder, saute for a while and pour the entire thing on the cooked dal. Mix the dal with the tadka properly.

     Here our  Delicious & Spicy Restaurant Style Dal Makhani is ready to be served hot with roti, chapathi or paratha.
