Ingredients :

1. 250 gm. Gram Flour(Besan)
2. 3 tbsp Powdered Sugar
3. 2 tbsp Lemon Juice
4. 1 tsp Grated Ginger
5. 1/2 tsp Turmeric Powder
6. 2-3 Chopped Green Chillies
7. 2 tsp Salt
8. 2 tbsp Oil
9.1 tsp Baking Soda
10. 1 Sachet Eno

11. Water as Required

For Tadka :
12.1 tbsp Oil
13. 1/3 tbsp Asafoetida(Hing)
14. 1/3 tsp Mustard Seeds
15. Some Curry Leaves
16. 3-4 Slit Green Chillies
17. 1 tsp Salt
18. 1/2 Cup Water

: Method :

* At first take a large bowl and put gram flour, powdered sugar, lemon juice, grated ginger, turmeric powder, chopped green chillies, salt to taste and some oil one by one and then by adding a small amount of water stir the mixture gently with a whisker in one direction till the batter reaches to a smooth consistency.

* In the meantime we shall preheat a cooker in which we’ll make the dhokla. Put a steel stand and some water inside the cooker and lock the cooker to preheat for a while. Don’t forget to remove the whistle of the cooker. On the other hand when the batter is almost ready add baking soda and mix well. Then we’ll add a sachet of Eno in the batter. Adding Eno is crucial to prepare the perfectly soft dhokla. After adding Eno you’ll see the batter will grow twice in volume. In this stage take a circular cake tin and pour the batter mixture in it. Don’t fill the tin completely. The cooker will be preheated in the meantime. Now place the cake tin carefully inside the cooker and lock the cooker for 30-35 minutes.

* After 30-35 minutes when the batter becomes fluffy take it out of the cake tin and cut it carefully into square size. Now we will make tadka for the dhokla. Take a separate pan and heat some oil and then add asafoetida, mustard seeds, some curry leaves, green chillies, some salt and water, saute a bit. Then pour the tadka over the dhokla pieces to make it more soft.

Here our soft and fluffy Dhokla is ready to serve. You’ll definitely love this super tasty soft dhokla which better than those you’ll find in the market.
