Ingredients :

                         1. 600 gm Parwal(Pointed Gourd)- 10 pcs

                         2. 3 Dry Red Chillies

                         3. 2 Bay Leaves

                        4. 1/3 teaspoon Asafoetida(Hing)

                        5. 1 teaspoon Cumin Seeds

                        6. Chopped Garlic

                        7. 2 Chopped Onions

                        8. 1 tablespoon Grated Ginger

                        9. 2 Chopped Tomatoes

                       10. Chopped Green Chillies

                       11. 1/3 teaspoon Turmeric Powder

                       12. 1/2 teaspoon Kashmiri Red Chilli Powder

                       13. Special Dry Roasted Masala

                       14. Water(as required)

                       15. Salt to taste

                       16. 2 tablespoon Mustard Oil

 

: Method :

 

                       * At first partly peel off the parwals and cut them in 2 pieces. Now take some mustard oil in a pan and cook all the parwals with a pinch of salt and turmeric powder. Don’t over-fry the parwals, keep them a little crunchy. When it is done take it out of the pan and on the same oil add dry red chillies, cumin seeds, asafoetida(hing) and bay leaves and saute for few seconds.
                       * Now add the chopped garlic and chopped onion and fry them for 2 minutes. After that add grated ginger and mix it well with the masala. After a minute add the fried parwals and mix well with the masalas. Then add chopped tomatoes into it and mix well. Now add chopped green chillies. After that add turmeric powder, kashmiri red chilli powder and salt to taste together and saute all the things for 3-4 minutes by covering the pan. The more you saute the masalas the tastier it will get.
                       * After 3-4 minutes  add a little water as this is a dry masala fry. Mix it and cook on medium flame by covering the pan for 3-4 minutes.Then when the dish is almost ready sprinkle a special dry roasted masala(comprising of Coriander Seeds, Cumin Seeds, Fennel Seeds and Whole Spices) over it for a nice aroma. Give a proper mix and its ready.

                       Here our  Delicious & Spicy Dry Parwal Masala Fry is ready to be served hot with roti, chapathi or paratha.
