Ingredients :

                         1. 500 gm pumpkin cut into cubes(peeled)

                         2. 2 potatoes cut into cubes

                         3. 1 tablespoon grated ginger

                        4. 2-3 slit green chillies

                        5. 2 bay leaves

                        6. 2 dry red chillies

                        7. 1 tablespoon panchforon masala(mixture of five spices)

                        8. 1/3 teaspoon asafoetida(hing)

                        9. 1/2 teaspoon turmeric powder

                       10. 1/2 teaspoon kashmiri red chilli powder

                       11. 1/2 teaspoon coriander powder

                       12. 1/2 teaspoon cumin powder

                       13. salt to taste

                       14. 1 tablespoon sugar (optional)

                       15. 1 small cup of water

                       16. 3 tablespoon oil to fry

                       17. some special dry roasted spice

Method :

                      * At first heat some oil in a pan and add Bay leaves, Dry Red Chillies, Asafoetida(Hing) & Panchphoron masala together and saute for few seconds. Then add Potatoes and Pumpkin(Kaddu) in it and fry them well by covering the pan for few minutes.
                       * Now take a bowl and add Grated Ginger, Turmeric Powder, Kashmiri Red Chillie Powder, Cumin Powder, Coriander Powder, Salt & a little water together, mix them and pour the mixture in the pan & cook it for 2 minutes.
                       * After 2 minutes add Green Chilli and cook for another 2 minutes. Then add Sugar and a small cup of water and cook the sabzi for 6-7 minutes by covering the pan.
                       * Now when the sabzi is almost ready, turn the gas off and add the Dry Roasted Special Masala and mix with it properly for that amazing aroma.
Here our super tasty & easy Aloo Kaddu Ki Masaledar Sabzi is ready to be served with roti,paratha,puri or chawal….
