Karela or Bitter Gourd is most of ours favourite sabji & you have tasted its sabji/fry in many ways. But I doubt that you have ever tasted this sabji in this way. I have prepared this Spicy Karela ki Sabji or fry in a unique way and it’ll surely serve you a different taste altogether. Ingredients :

                         1. 4 pcs./400gm. Bitter Gourd(Karela)

                         2. 1 Finely Chopped Potato

                         3. 3 Finely Chopped Onions

                        4. 3-4 Slit Green Chillies

                        5. 1 tsp Turmeric Powder

                        6. 1/4 tsp Asafoetida(Hing)

                        7. 1 tbsp Panchforon Masala

                        8. 1 tsp Coriander Powder

                        9. 1 tsp Kashmiri Red Chilli Powder

                       10. Salt to taste

                       11. Some Water

                       12. 2 tbsp Mustard Oil

 

                                                                                      : Method :

 *  At first cut all the Karelas in thin slices. Now take some water in a bowl and soak the karela slices in it with some salt for 5 minutes. Now heat some mustard oil in a pan and fry the karela slices. Remember to strain the karela from water before adding to oil. Now add turmeric powder with the karela slices and fry them for 7-8 minutes till they are perfectly fried.

   * Now in the same oil fry the chopped potato. Add some salt in it to let it fry faster. When it is done add chopped onion and slit green chillies and fry for 4-5 minutes till they are well fried. Now add asafoetida(hing) and panchforon masala to it and mix well with the fry. After a few minutes add the previously fried karela along with coriander powder(this one is crucial) and kashmiri red chilli powder and mix all the things together. Then sprinkle some water on the fry to bring in slight moisture in it. Now cook it for 2 more minutes on medium flame by covering the pan.

     After 2 minutes here our super tasty special Karela Fry/Karela Ki Sabji is ready to serve with Steamed Rice or Roti.
