Ingredients :

                         1. 500 gm Kathal(Jackfruit)

                         2. 3 Potatoes

                         3. 3 Bay Leaves

                        4. 2 Dry Red Chillies

                        5. 1 Cinnamon Stick

                        6. 4 Green Cardamoms

                        7. 4 Cloves

                        8. 1/2 teaspoon Cumin Seeds

                        9. 1/3 teaspoon Asafoetida(Hing)

                       10. 1 Chopped Onion

                       11. Paste of 1 Onion

                       12. 2 tablespoon Ginger-Garlic Paste

                       13. 1 teaspoon Turmeric Powder

                       14. 1 teaspoon Cumin Powder

                       15. 1 teaspoon Coriander Powder

                       16. 1/2 teaspoon Kashmiri Red Chilli Powder

                       17. Paste of 2 Tomatoes

                       18. 2 Green Chillies

                       19. 1 teaspoon Sugar

                       20. 1/2 teaspoon Garam Masala Powder

                       21. Chopped Coriander leaves

                       22. 3-4 tablespoon Mustard Oil

                       23. 1 teaspoon Ghee

                       24. Salt to taste

                       25. Water(as required)

 

: Method :

 

                       * At first cut the Jackfruit and Potatoes in square size pieces. Then heat Mustard Oil in a pan and stir fry all the Jackfruit pieces and Potatoes in it for a while. When it is done take them out on a tissue paper and keep aside. Now on the same oil add Bay Leaves, Dry Red Chillies, Cinnamon Stick, Green Cardamoms, Cloves, Cumin Seeds and Asafoetida(Hing) and saute for few seconds.
                       * Now add the Chopped Onions and fry for 2-3 minutes.After that add paste of onion and ginger-garlic paste and saute them well for a while with the pan-cover on. Now take some water in a small bowl and add Turmeric Powder, Cumin Powder, Coriander Powder and some Salt together, mix it and put the whole mixture in the pan and saute it well for a while. Now add Green Chillies and Tomato Paste into it and cook it well for 2-3 minutes.
                       * Now add Kashmiri Red Chilli Powder and Sugar, mix it well by adding a dash of water. Now its time to add the fried Jackfruits and Potatoes. After adding them mix them well with the masala for a minute and then add 1 cup of water, mix it and cook on medium flame by covering the pan for 10-12 minutes.Then when the dish is almost ready add some Chopped Coriander Leaves, Garam Masala and Ghee for that amazing flavour. Give a proper mix and its ready.

                       Here our  Delicious & Spicy Aloo Kathal Ki Sabji or Jackfruit Curry is ready to be served hot with roti, chapathi, paratha or rice.
