Ingredients:
For Kofta:
1. 750 gm. Grated Lauki(Bottle Gourd)
2. 1 tsp Grated Ginger+2 Chopped Green Chillies
3. 1 Chopped Onion
4. 1/4 tsp Turmeric Powder
5. 1 tsp Roasted Cumin & Coriander Powder
6. 1/4 tsp Black Pepper Powder
7. 1/2 tsp Red Chilli Powder
8. 1/2 tsp Garam Masala Powder
9. Chopped Coriander Leaves
10. Salt to Taste
11. 4-5 tbsp Besan(Gram Flour)
12. Oil to Fry
For Gravy:
13. 2 tbsp Oil
14. 2 Bay Leaves+2 Green Cardamoms+1 Cinnamon+2 Cloves
15. 1 tsp Cumin Seeds
16. 2 Chopped Green Chillies
17. Onion-Ginger-Garlic Paste
18. 1/4 tsp Turmeric Powder
19. 1/4 tsp Hing
20. Paste of 3 Tomatoes
21. 1/2 tsp Cumin-Coriander Powder
22. 1 tsp Kashmiri Red Chilli Powder
23. Salt to Taste
24. 1 Cup Water
25. 4-5 Slit Green Chillies
26. Chopped Coriander Leaves
27. 1/2 tsp Garam Masala Powder

Method

At first grate the bottle gourd finely. Bottle gourd contains a lot of water inside it. To make the kofta out of it we need to get rid of all that water. SO after grating it, squeeze out the water with your hand. Make sure it is almost free of water. Now add all the ingredients mentioned above one by one in the grated bottle gourd and mix all of them to make the mixture for the kofta. Add as much gram flour as required. But don’t add too much. Then heat sufficient oil in a pan and fry all the koftas by releasing a generous amount of that mixture into oil. When they are fried golden and crispy, take them out on a platter and keep aside.

Now we will make the gravy for the kofta. Heat 2 tablespoon of oil and add bay leaves, some whole spices some cumin seeds and chopped green chillies and saute for a while. After that add onion-ginger-garlic paste along with some turmeric powder and hing and cook the gravy for some time. Then add tomato paste and cook until it starts to release oil. After that add cumin-coriander powder, kashmiri red chilli powder and salte to taste and mix well and cook further. After few minutes add 1 cup of water and also some slit green chillies. Then add the dried kofta balls in the gravy and cook till the koftas absorb the gravy. In the end add coriander leaves and garam masala and here our spicy and tasty Lauki Kofta/Bottle gourd Kofta is ready.
