1. 1 cup (400 gm ) all purpose flour (maida )
2. 1 cup of fresh green peas
3. 25 gm oil
4. some ginger cut into cubes
5. 4 chopped green chillies
6. 1 pinch of asafoetida ( hing )
7. 1/4 teaspoon black cumin seeds
8. 1/4 teaspoon carom seeds
9. 1 teaspoon sugar
10. salt to taste
11. some water as required
MUST WATCH DUM ALOO RECIPE-PERFECT SIDE-DISH FOR MATAR KACHORI :
Step 1 : Boil the peas into warm water for 3 minutes.Then drain the extra water from it and keep aside.Now take a mixture container,pour the boiled peas,ginger pieces & chillies.Make a paste,don’t add water into it.
Step 2 : Take a bowl,pour the maida,sugar,salt,oil.Mix all the ingredients before. Add some water in the mixture and make a medium smooth,soft dough.Make sure that it should not be too soft. Now cover it for 20-30 minutes in the normal temperature.
Step 3 : Take a pan add oil and after heating the oil add all the whole spices,saute it for few seconds and add peas paste and cook it for 10 minutes on low-medium flame or until the mixture becomes sticky.
Step 4 : After opening the cover take a small portion of dough,and give a round shape like puri.Roll it a little,pour the mixture and seal the dough well and roll it again gently & make a round shape like normal puris.Make sure it should not be too thin or too thick. It should be medium in thickness.
Step 5 : Take that pan and heat it .Give enough oil & let it heat enough.Now give the puri into it and fry till golden brown from both sides.Take it out and serve it immediately with DUM ALOO or Aloo Matar Ki Sabji..
