The crispy paratha with spicy & delicious stuffings is such a treat to have at any time of the day. Ingredients :

                         1. 250 gm. Maida(All purpose flour)

                         2. 1/3 tspn Sugar

                         3. 1/2 tspn Cumin Seeds

                         4. Some Roasted Peanuts

                         5. 1 tspn Grated Ginger

                         6. 1 tspn Grated Garlic

                         7. 1 Chopped Onion

                        8. 1 Grated Carrot

                        9. 1/2 Finely Chopped Tomato

                      10. 3 Chopped Green Chillies

                       11. 1/3 tspn Cumin Powder

                      12. 1/3 tspn Coriander Powder

                      13. 1/2 tspn Turmeric Powder

                      14. 1/2 tspn Kashmiri Red Chilli Powder

                      15. 2 Grated Boiled Potatoes

                      16. 100 gm. Grated Paneer(Cottage Cheese)

                      17. Some Breadcrumb

                     18. 3 tspn Salt

                     19. Oil to fry

 

 

: Method :

                       * At first take maida in a bowl and add some oil, salt, sugar. Then by adding some lukewarm water once in a while make soft dough from it. When the soft dough is made cover it for some time.

                       * Now take some oil in a pan and add cumin seeds and roasted peanuts and fry for one minute. Then add grated ginger & garlic and saute for another one minute. Now we will add chopped onion & grated carrot and saute for 2 more minutes. After that we will add chopped tomatoes & chopped green chillies. Then add all the powdered masalas and salt to taste & saute everything for a minute. When it is well sauteed add grated boiled potatoes and mix well with the masala. Then its time to add some breadcrumbs to bring that extra taste to the stuffings. We will saute for another minute after adding the breadcrumb. Then add grated paneer and mix again. When the stuffings of the Mughlai Paratha is completely ready, take it out on a platter.

                       * Now take a generous portion of the dough and roll it into slightly bigger rectangular shape. Now put the stuffings that we have made into it along with some chopped onions and green chillies & fold the dough from all the sides to give it a purse like look. Now fry it in the oil that we have already heated in a pan. Fry it until it is golden from both the sides. When it is done take it out on a plate and serve it with Dum Aloo and onion rings.

                    Here, our Special Crispy Veg Mughlai Paratha is ready to serve hot.. Take a bite & You’ll utter only one word “Wah”….
