1. 1.5 Cup Maida
2. Salt to Taste
3. 1/3 tsp Kalonji(Nigella Seeds)
4. 1.5 tbsp Refined Oil
5. Water as Required
6. Oil to Fry
At first take maida in a large bowl and add salt, some kalonji(you can use ajwain instead) and some refined oil to it. Mix all the things, AFter that add water as required and start kneading the dough. The dough for this recipe should not be too soft or too stiff. When done cover the dough for 15-20 minutes with a wet cloth.
After the resting period divide the entire dough into three pieces. Take on piece and roll it like a roti/chapathi. Keep the size of the roti a bit large. Because we need to cut the shapes from it. Now take the special cookie cutter of your choice and cut shapes from that roti. make as much as you can. If you don’t have the cookie cutter, use knife and make the traditional shapes of Nimki from it.
Now heat sufficient oil in a pan. When heated release the namkeens in the oil. Fry till they are golden and crispy. When done take them out on a platter.
