Ingredients :
1. 300 gm. Sabudana (soaked for 2-3 hrs.)
2. Some Raw Peanuts
3. 1 boiled & chopped Potato
4. 1 chopped Tomato
5. 1 teaspoon grated Ginger
6. 2-3 chopped Green Chillies
7. some chopped Coriander Leaves
8. 1 teaspoon Cumin Seeds
9. 1/2 tsp Black Pepper Powder
10. 1 tsp Lemon Juice
11. 1 tsp Ghee
12. 2 tbsp Refined Oil
13. Salt to taste(Rock Salt for vrat)

Method :

Soak the sabudana for at least 2-3 hrs. Don’t soak in too much water. Otherwise it won’t become fluffy.Now take a pan give oil and let it heat up.Fry the peanuts golden & take them out from the pan.Give cumin seeds,grated ginger, chopped green chillies into the hot oil & fry for few minutes.Now add tomato and fry them for 2-3 minutes. Then give boiled potato and fry for 3-4 minutes on medium flame. Now add black pepper powder & rock salt. Saute them for 1 minute. Now add soaked sabudana and mix it well with the masala & aloo.Now cover it & cook it for 2-3 minutes on medium flame.Open the lid & spread coriander leaves, fried peanuts and lemon juice on it and mix well.

Turn off the flame.Add little ghee on the khichdi in the end. Here our super tasty & mildly spicy Sabudana Khichdi is ready to be served hot… HAPPY COOKING:)
