Ingredients :

For Paneer Marination:
1. 200 gm. Paneer Cubes
2. 1/2 tsp Turmeric Powder
3. 1 tsp Coriander Powder
4. 1/2 tsp Kashmiri Red Chilli Powder
5. 1/4 tsp Ajwain
6. Some Kasuri Methi
7. 2 tbsp Curd
8. 1 tbsp Mustard Oil

For Gravy :
9. 2-3 tbsp Oil
10. 1/2 tsp Jeera
11. Whole Spices + Javitri
12. 1 Dry Red Chilli
13. 2 Slit Green Chillies
14. Paste of 3 Tomatoes & 1″ Ginger
15. 1/3 tsp Turmeric Powder
16. 1/4 tsp Hing
17. 1/2 tsp Cumin Powder
18. 1/3 tsp Coriander Powder
19. 1/2 tsp Kashmiri Red Chilli Powder
20. Salt to Taste
21. 2 tbsp Kaju Paste
22. 3-4 tbsp Coconut Milk
23. 1/2 tsp Sugar
24. 1/2 tsp Garam Masala Powder
25. Some Kasuri Methi
26. Water as required

METHOD

At first take paneer cubes in a bowl and add all the ingredients mentioned above and mix them well with the paneer cubes. Make sure the paneer cubes are well coated. Now keep it aside for a while. Now take a pan and heat some oil. Now fry all the masala coated paneer cubes. Fry them lightly from both sides. When done take them out.

Now in the same oil jeera, whole ground spices with javitri, dry red chilli and slit green chillies and fry them for few seconds. Then add paste of tomato and ginger and mix well. After a minute add all the powdered masalas and mix well. Now cook the gravy for a while by covering the pan. After 3-4 minutes when the gravy starts releasing oil add kaju paste and then coconut milk and mix well. After a while add all the fried paneer cubes and mix them well with the gravy. As a finisher add little sugar to maintain the balance of taste and also garam masala powder and some kasuri methi. When done serve the spicy and special Paneer Masala in a serving bowl.
