Ingredients: 1. 4 Pav Bread 2. 2 tbsp Oil 3. 3 tbsp Butter 4. 1/2 tsp Jeera 5. 1 tbsp Grated Garlic 6. 1 Chopped Onion 7. 1 tsp Grated Ginger 8. 1 Chopped Capsicum 9. 2 Chopped Green Chillies 10. 4 Grated Tomatoes 11. Salt to Taste 12. 1/2 tsp Turmeric Powder 13. 3 Boiled & Grated Potatoes 14. Chopped Coriander Leaves 15. 1/3 tsp Hing 16. 1 tbsp Pav Bhaji Masala 17. Water as Required 18. 1 tsp Kashmiri Red Chilli Powder 19. 1/2 tsp Garam Masala Powder 20. Some Kasuri Methi 21. 1 tsp Lemon Juice 22. Some Grated Cheese
At first we will make the bhaji. Heat some butter and oil in a kadai. Then add some jeera, grated garlic, chopped onion and chopped ginger and saute for a while. After that add some chopped capsicum, green chillies and then the base ingredient of the bhaji i.e. grated tomatoes. After adding the tomato add some salt and turmeric powder, mix and cook on low flame for a while. Now add boiled potato and mix well with the gravy. After mixing add coriander leaves, hing(asafoetida) and the special Pav Bhaji Masala and give all of them a good mix. Now add sufficient water to it because we are going cook it in low flame for some time till it reaches required consistency.
After 6-7 minutes add kashmiri red chilli powder and mix well. Now take a masher and mash the bhaji continuously for few minutes to give the bhaji a frothy texture. This step is very crucial. Now in the end add garam masala and some kasuri methi to finish it off. Actually it has not finished yet. You can serve the bhaji at this stage. But to make it more tasty take a flat tawa and melt some butter in it and add some onion, coriander leaves, red chilli powder and some lemon juice and then add re fry the bhaji along with it fir a while.
Now we will prepare the pav breads. Take a separate tawa and melt some butter and place the Pav breads over it. Roast it in butter from inside and both the sides. Now take serving platter and serve the Pav & Bhaji together along with some chopped onion and lemon slices. To make the bhaji tastier grate some cheese over it(optional) and place one teaspoon butter.
