Ingredients :

                         1. 250 gm. Chole(Chickpeas)

                         2. 1 tsp Tea tied in a cloth

                         3. 1 Bay Leaf

                        4. 2 Green Chillies

                        5. 2 Black Cardamom, 2 Green Cardamom, 4-5 Cloves, 1 Cinnamon Stick and some Mace

                        6. 1 tspn Cumin Seeds

                        7. 1 Dry Red Chilli

                        8. 2 Grated Onions

                        9. 2 tbsp Ginger-Garlic Paste

                       10. 1/2 tsp Turmeric Powder

                       11. 1 tsp Black Pepper Powder

                       12. 1 tsp Dry Mango Powder

                       13. 1 tbsp Chole Masala

                       14. Puree of 3 Tomatoes

                       15. 1 tsp Kashmiri Lal Mirch Powder

                       16. Kasuri Methi

                       17. 2 tbsp Mustard Oil

                       18. Salt to taste

For Tadka :-

 

                         1. 1 tbsp Mustard Oil

                         2. 3-4 Slit Green Chillies

                         3. Few Ginger Juliennes

                         4. 1/2 tsp Kashmiri Lal Mirch Powder

 

                                                                                          : Method :

 *  At first boil the overnight soaked Chole(Chickpeas) in water inside a pressure cooker. Add bay leaves, green chillies, whole ground spices and some salt while boiling.Here we need to use a special thing while boiling the chole. Take a clean piece of cotton and tie up 1 tsp tea leaves in it & put the teabag inside the cooker. This will give our Punjabi Chole Masala its traditional blackish colour.Boil the chole till seven(7) whistles in the cooker. When it is done keep the boiled dal along with the stock aside for later use.

   * Now take oil in a pan and add dry red chilli, cumin seeds and fry for a while. Then add chopped onions and fry for 2 minutes till it turns golden. After that add ginger-garlic paste and saute for 4-5 minutes by covering the pan. When it is fried perfectly add turmeric powder, black pepper powder, dry mango powder and the special chole masala one by one.Then add tomato puree, kashmiri lal mirch powder & salt to taste and let it cook for another 2-3 minutes. Now its time to add the cooked chole. Mix it up well with the masala and then add the stock. We won’t use any extra water, rather we are using the stock of the chole to make the dish tastier & healthier. After mixing the dal well with the masalas  we will now cook it for around 8-10 minutes on medium flame. When our chole is almost ready add kasuri methi to it to make it tastier.

  * But it is not done yet. Now when our chole is ready its time add the tadka in it. Take a tadka bowl, take some mustard oil, 3-4 slit green chillies and ginger juliennes and some kashmiri lal mirch powder, saute for a while and pour the entire thing on the cooked chole masala. Mix the chole with the tadka properly.

     Here our  Delicious & Spicy Punjabi Dhaba Style Chole Masala is ready to be served hot with Kulcha, Naan, Bhature or Paratha…
