Ingredients :


For Kadhi:-

                         1. 5 tbspn Besan

                         2. 1+1/2 Cup Yogurt

                         3. 1 tblspn Garlic + Green Chilli Paste

                         4. 1 tspn Turmeric Powder

                         5. 1/2 teaspoon Kashmiri Red Chilli Powder

                         6. 5-6 Cup Water

                         7. 2 tblspn Oil

                         8. 2 Bay Leaves

                         9. 3 Dry Red Chillies

                       10. 2 Green Cardamoms

                       11. 1 Cinnamon Stick

                       12. 2-3 Cloves

                       13. 7-8 Whole Black Pepper

                       14. Water(as required / 1 cup)

                       15. 1/2 teaspoon Cumin Seeds

                       16. 1/3 teaspoon Methi + Mustard Seeds

                       17. 1/4 tspn Asafoetida(Hing)

                       18. 1/4 tspn Coriander Seeds

                       19. 1 tblspn Grated Ginger

                       20. 1/2 teaspoon Cumin Powder

                       21. 1 teaspoon Coriander Powder

                       22. Some Dry Roasted Kasuri Methi

                       23. Salt to taste

For Pakora :-

                     24. 1/2 Cup Besan

                     25. 1/2 tspn Turmeric Powder

                     26. 1/2 tspn Red Chilli Powder

                     27. Refined Oil to fry

                     28. 4 Chopped Onions

                     29. 1/3 tspn Carom Seeds(Ajwain)

                     30. 3-4 Chopped Green Chillies

                     31. 1 tspn Rice Flour

                     32. Water in small quantity / as required

                     33. Salt to taste

For Tadka :-

                    34. 1 tspn Ghee

                    35. 1/4 tspn Cumin Seeds

                    36. 1/4 tspn Asafoetida(Hing)

                    37. 1/4 tspn Coriander Seeds

                    38. 7-8 Curry Leaves

                    39. 1/3 tspn Red Chilli Powder


: Method :

                       * At first mix the besan with yogurt, garlic+green chilli paste, turmeric powder and kashmiri red chilli powder & then add 5-6 cups of water to make a thin / watery mixture. Now take some mustard oil in a pan and add bay leaves, dry red chillies, asafoetida, cumin seeds, whole coriander seeds, black pepper and all the whole spices, grated ginger and saute for a while. Then pour the besan yogurt mixture in the pan and mix it well with the masala. Add some water. Then after 6-7 minutes add cumin powder, coriander powder and salt to taste & give a mix.Then cook the whole thing for about 30 minutes on low-medium flame till the Kadhi gets to a thick consistency. Don’t forget to stir the mixture once in a while to prevent it from getting burnt.

                       * Now on the other hand lets make the pakoras. Take the chopped onions in a bowl and add besan, turmeric powder, red chilli powder, carom seeds, chopped green chilies and rice flour and mix the whole thing by adding water slowly in small quantities. Now take a lot of refined oil in a pan to fry the pakoras, When the oil is enough hot put the pakora mixture by making any shape of your choice and fry all the pakoras till they are golden & crispy.You have to stir the kadhi on the other gas in between fry the pakoras.

                       * Now when our Kadhi has reached its desired consistency put all the pakoras in it and mix it for 10 minutes till the pakoras are well dipped and soft. Then add a very special thing, dry roasted Kasuri Methi to bring that earthy flavour. Mix well. Now its time to add a special Tadka. Put ghee, cumin seeds, asafoetida, coriander seeds, curry leaves and red chilli powder in a tadka pan, saute for few seconds and pour it over the Kadhi Pakora. Give a light mix and our Special Punjabi Dhaba Style Kadhi Pakora is ready  to serve hot with roti, paratha or steamed rice.
