Ingredients :

                         1. 500 gm basmati rice

                         2. 1 Kilo Kathal (Raw Jackfruit)

                         3. 5 Chopped Onions

                        4. 6 Potatoes

                        5. 2 tblspn Ginger-Garlic Paste

                        6. 1 tspn Green Chilli Paste

                        7. 2 tblspn Yogurt(Dahi)

                        8. 2 tspn Turmeric Powder

                        9. 1 tspn Kashmiri Red Chilli Powder

                       10. 1 tblspn Special Biryani Masala

                       11. 1/3 tspn Sugar

                       12. Some warm Milk

                       13. Salt to taste

                       14. 1/2 tspn Shahi Jeera, 3 Bay Leaves, Some Kabab Chini, Whole Spices, Mace

                       15. 1/2 Glass Water

                       16. 1 tablespoon oil & 1 tablespoon ghee

                       17. Saffron(Kesar), Food Colour(Optional)

                       18. 1/2 tspn Kewra Water & 1/3 tspn Rose Water, 3-4 Drop Meetha Attar

                       19. Some Cashew Nuts

 

: Method :

                      * At first we will fry the chopped onions till golden brown to make Beresta. Then fry the potatoes by mixing a little turmeric and kashmiri red chilli powder with it. Now we will boil the kathal pieces in water by mixing salt and turmeric powder to it.

                       * Now it’s time to marinate the boiled Kathal. For that we are going to add ginger-garlic paste, green chilli paste, yogurt,turmeric powder, kashmiri red chilli powder, sugar, salt, the Special Biryani Masala, kewra water & some beresta with the boiled kathal and mix it well and keep it aside for 45 minutes.

                       * Now while the kathal marinates we will soak the Basmati Rice for 15 minutes and after that take some water in a pan and add the soaked rice into it. Then add 3 bay leaves, 4-5 kabab chini, some whole ground spices, mace, some salt & little ghee into the boiled water.Boil the rice for 5-6 minutes on high flame.We have to boil the rice 80%.

                       * Now take some warm milk in a bowl, add some saffron(kesar) strands, food colour(optional), kewra water, rose water and meetha attar to prepare the flavouring agent for the biryani & Keep aside. Now take some oil in the same pan,heat up well.Now add shahi jeera & little kabab chini to it and then add the marinated kathal and cook it for 2 minutes.Then add fried potatoes to it.Then add some beresta, some cashew nuts, the flavouring saffron milk and cook it another 2 minutes.Now add 1/2 glass of water and mix well for a minute. Now we will make layers of biryani with rice. On top of the kathal gravy spread the boiled rice, beresta, ghee,flavouring saffron milk, biryani masala and cashew nuts to make the first layer. Then spread the rice once again along with beresta, flavouring saffron milk, cashew nuts & ghee to make the second layer. Now lock the pan & cook for 20 minutes on low-medium flame. After 20 minutes put the pan once again on top of a flat tawa on Dum for another 15 minutes on low medium flame.

                       * After 15 minutes unlid the pan & our moist,fluffy, flavourful restaurant style Kathal Dum Biryani is ready to be served hot with chilled raita…Please share this recipe with your friends & family this Holy Ramzan.
