Ingredients : –
1. 5 eggplants,cut into halves(washed)
2. paste of 2 onions
3. paste of 3 tomatoes
4. 25 gm paste of poppy seeds
5. 1 tablespoon ginger paste
6. 1 tablespoon garlic paste
7. 1 teaspoon cumin seeds
8. 1 teaspoon turmeric powder
10. 1/2 teaspoon garam masala powder
11. 1 teaspoon kashmiri red chilli powder
12. 1 teaspoon cumin powder
13. 1 teaspoon coriander powder
14. some whole garam masala,3 bay leaves
15. 3 slit green chillies
16. 2 dry red chillies
17. 4 tablespoon mustard oil
18. 2 tablespoon paste of melon seeds
19. 2 tablespoon paste of mustard seeds
19. 2 tablespoon yogurt
20. 1 teaspoon ghee
21. 4-5 tablespoon mustard oil
22. salt to taste
23. 1 teaspoon sugar

Method : –
Step 1 : Fry the baingan till golden on hot oil for 6-7 minutes.You can cover the lid during frying.Take them out from the pan and keep aside.
Now Put oil on hot pan and let it heat up. give whole garam masala,dry red chilli,bay leaf,cumin seeds.Mix it for few seconds.Then add onion paste,fry for 3-4 minutes.Add ginger and garlic paste and & fry well for 3-4 minutes.Now add tomato paste & cook it for 3-4 minutes.You can cover it .Add poppy seeds paste into the masala and cook it for 2 minutes.Now give melon seeds paste and again stir well for 2 minutes.
Step 2 : Now give green chillies,all the powdered masala into the mixture and stir well for 2 minutes.Now add mustard seeds paste and mix them well with the masala.Add little water into the masala.Stir once or twice & add salt to taste ,now cover the lid for 4-5 minutes on medium flame.Then add garam masala powder & yogurt in the mixture and mix again for 1 minute.Now add 1 cup of water and give chopped coriander leaves,mix well. Now give all the fried baingan and mix lightly & add ghee.Turn off the flame.Now cover the lid for 10 minutes.
