Ingredients :

                         1. 250 gm Basmati Rice

                         2. 1 Bay Leaf

                         3. 4 Green Cardamom

                        4. 1 Cinnamon Stick

                        5. 3 Cloves

                        6. Saffron(Kesar) Strands soaked in Milk

                        7. 1/3 teaspoon shahi jeera(caraway seeds)

                        8. Some Whole Garam Masala

                        9. Some Mace(Javitri)

                       10. 25 gm Cashew Nuts

                       11. 25 gm Raisins(Kishmish)

                       12. Some Chopped Almonds

                       13. Some Grapes(Angur)

                       14. Some Chopped Dates(Khajur)

                       15. Some Pomegranate Seeds(Anardana)

                       16. Some Cherries

                       17. 3-4 tablespoon Sugar

                       18. Salt to taste

                       19. Some Crushed Mace(Javitri) & Nutmeg(Jaiphal)

                       20. 1 tablespoon Refined Oil

                       21. 2 tablespoon Ghee

 

: Method :

 

                       * At first cook the rice along with some oil, bay leaf, green cardamom, cinnamon & cloves in double quantity of water for 5-6 minutes in high flame. When the rice gets cooked then drain the water and leave it to cool off. Then heat some ghee & oil in a pan and add shahi jeera, whole garam masala, some mace(javitri) and saute for few seconds. Then add cashew nuts, raisins and chopped almonds together and saute them for a minute on medium flame.
                       * Then add some grapes, dates(khajur) and cherries & stir for time. Then add Sugar and cook until it melts.Now add some salt to taste.Now its time to add the cooked basmati rice. After adding the rice pour the saffron(kesar) milk on top of the rice and mix it very well with the rice.Now add some mawa(kheer) with the rice.
                       * Now mix all the things in the pan very carefully so that all the masalas and fruits mix properly with the rice.After a proper mix cover the pan for 5 minutes till it gets ready to be served.

                       Here our Super tasty and delicious Paneer Dum Biryani in Pressure Cooker is ready to be served hot with any type of gravy.
