1. 1 Litre Full Fat Milk
2. 1.5 tbsp Vinegar
3. 1 tbsp Maida
4. 7-8 Cup Water
5. 350 gm. Sugar


At first boil the full fat milk in a large pan. After it gets boiled cool it a bit and then add vinegar in it so that it transfer into ‘chhena’. In a few seconds you the chhena will get separated from water and then strain it. Place a porous pan and over it place a cotton cloth. Then pour the chhena with its water and strain it. Squeeze lightly to get rid the extra water from chhena. Now tie the cloth with chhena inside it from a higher place and keep it as it is for 5-6 hours so that the chhena releases all the extra water from it.

After 5-6 hours take out the chhena from the cloth and place it on a large platter. Now we need to knead the chhena very well. This kneading process very crucial in making Rasgulla. You can mix a little maida in it for binding. Knead it hard for some time till it becomes smooth and fine. In the mean time take water in a pan and add sugar in it to make the sugar syrup(chashni). Take more water as the rasgulla needs sufficient water to soak in. Let the sugar syrup boil.

On the other hand start making rasgulla balls from the chhena. Make medium sized rasgulla balls. Make as much as you can. Make sure that the balls don’t have any cracks. If they have cracks they will break in the chashni. When the chashni is ready release all the rasgulla balls into it. Don’t cover the pan. Stir the balls lightly with a spoon. In a few minutes the balls will start to absorb the syrup and grow in size. After few minutes check if the rasgullas are well cooked. If sugar syrup dries up add some water. After the balls are cooked pour cold water over them. After that switch off the gas and let the rasgullas stay in the sugar syrup for nearly 5-6 hours or overnight. After that serve the rasgullas to your family & friends. They will surely enjoy…
