Ingredients: 1. 200 gm. Paneer 2. 1/4 tsp Turmeric Powder 3. Salt to Taste 4. 1/4 tsp Kashmiri Red Chilli Powder 5. 1/4 tsp Hing 6. Lemon Juice 7. 1/2 tsp Jeera(Cumin Seeds) 8. 1 tsp Dhania(Coriander Seeds) 9. 1/4 tsp Saunf(Fennel Seeds) 10. Some Whole Spices 11. 3 Dry Red Chillies 12. 1 tbsp Ghee 13. 3 tbsp Oil 14. Diced Capsicum 15. Onion Petals 16. 2 Bay Leaves 17. 2 Chopped Onions 18. 2 tbsp Ginger-Garlic Paste 19. Paste of 3 Tomatoes 20. 2 Chopped Green Chillies 21. 1/2 tsp Hing 22. 1 tbsp Special Masala 23. Some Kasuri Methi 24. Water as Required 25. 1 tbsp Fresh Cream 26. Chopped Coriander Leaves
At first marinate the paneer cubes in turmeric powder, red chilli powder, salt, hing and some lemon juice. Now keep it aside. now we will dry roast some masalas on a frying pan. Take cumin seeds, coriander seeds, fennel seeds, some whole spices and 2 dry red chillies and roast them for a while and then grind it in mixer to make a special masala for this Special Kadai Paneer. Now take some ghee in the same frying pan and fry the marinated pieces of Paneer. Fry them lightly and then keep aside.
Now take a kadai and fry some diced capsicum and onion petals lightly in oil. Then in the same oil add bay leaves, cumin seeds, whole spices, one dry red chilli and saute them for a while. The add chopped onion, ginger-garlic paste and some turmeric powder and fry till the onions are golden. After that add tomato paste and chopped green chillies, some hing and some red chilli powder and let it cook for few minutes. After that add the special masala, salt to taste, some kasuri methi and mix well and add required amount of water and let it cook by covering the pan. Thereafter when the oil oozes out of the gravy add the fried capsicum and onion petals along with the fried paneer cubes. Mix them properly with the special gravy . Add some more kasuri methi if you like, some fresh cream and lastly some coriander leaves to finish off the cooking.
Here our Spicy & Tasty Kadai Paneer is ready to serve hot with roti, paratha, kulcha or naan.
