1. 300 gm. Biryani Rice
2. Some Cauliflower Florets
3. 1 Chopped Carrot
4. 2 Diced Potatoes
5. 1 Chopped Onion
6. Coriander Leaves
7. 2 tbsp Ginger-Garlic-Green Chilli Paste
8. Little Turmeric Powder
9. 2 tbsp Biryani Masala
10. 1/2 tsp Coriander Powder
11. 3 tbsp Curd
12. Kashmiri Red Chilli Powder
13. 1 tsp Ghee
14. 1.5 litre Water
15. Whole Spices
16. 2 Bay Leaves
17. 2 tbsp Oil
18. 1 tsp Jeera
19. 1 Chopped Onion
20. 2 Chopped Tomatoes
21. 1/2 tsp Hing
22. Salt to taste
23. 1/2 tsp Kashmiri Red Chiili Powder
24. 2 slit Green Chillies
25. 1/2 cup of Milk
26. 1/4 tsp Kewra Water
27. 1/4 tsp Rose Water
28. Some Cashew Nuts
29. Some Chopped Coriander Leaves
30. Water 1/2 cup
31. Sweet Attar 4-5 drops.


At first in a large bowl take all the vegetables along with ginger-garlic-chilli paste, powdered masalas with biryani masala and ghee and mix all the things together with some curd. Now keep the marinated vegetables aside for a while. On the other hand wash and soak biryani/basmati rice for some minutes. Now heat some water in a cooker and put some whole spices, some salt and the soaked rice in the boiling water. Boil the rice 60-70%. Then strain the water from rice and keep it aside.

Now in the same pan take some oil and fry some chopped onions to make beresta. Then in the same oil add bay leaves, jeera, some chopped tomatoes, hing, salt and red chilli powder, green chillies and then the marinated vegetables and cook all the things on medium flame for a while. Now we are going to prepare a special mixture. Take some milk in a small bowl, in it add a pinch of turmeric powder, and the flavouring agents like kewra water, rose water and some more biryani masala. Now on the other hand when the veggies are prepared add some beresta, half of the special milk mixture, 1/2 cup of water and then the semi-cooked rice on top of it. Now on top of rice add some cashew nuts, some beresta, the remaining milk mixture, some coriander leaves, some ghee and few drops of sweet attar. Now lock the cooker with lid and wait for just one whistle. When done check the rice and the veggies underneath it and then serve it hot on a platter.

Thus our very special aromatic Vegetable Dum Biryani is ready to serve hot. Made in completely new way, its taste will simply blow you away.
