Ingredients :

1. 250 gm. Basmati Rice
2. 4 Bay Leaves
3. 1/2 tsp Shahi Jeera
4. 1/4 tsp Fennel Seeds(Saunf)
5. Some Whole Ground Spices + Some Mace(Javitri)
6. 1/2 tsp Grated Ginger
7. 100 gm. Paneer Cubes
8. Cauliflower Florets
9.1 Chopped Carrot
10. 1 Diced Potato
11. Some Chopped Beans
12. 3 Green Chillies
13. Some Boiled Chickpeas(Kabuli Chana)
14. Some Cashew Nuts
15. Some Raisins(Kishmish)
16. 1 tsp Lemon Juice
17. Ground Cardamom+Mace+Nutmeg
18. Water as Required
19. 2 tbsp Ghee
20. Salt to taste

: Method :


  • At first soak the basmati rice in double water for 10 minutes. In the meantime heat ghee in a pan and add bay leaves, shahi jeera, saunf and whole garam masala along with some mace and saute for a while. After that add grated ginger and saute for a minute. Now add paneer cubes(optional) and fry till they are slight golden. When done take out the paneer cubes from the pan.

  • Now we will fry the sabjis to be used in the pulao. Add cauliflower florets, chopped carrots, diced potatoes, chopped beans and green chillies one by one. We won’t fry them much as we need slightly crunchy veggies in the pulao. We shall fry the veggies for 2-3 minutes on medium flame.After 2-3 minutes add the boiled chickpeas(kabuli chana) and fry for 2-3 minutes more. Now we will add cashew nuts and raisins(kishmish) and mix them well.

  • Now its time to add the soaked basmati rice.Mix it with the fried veggies. Then add fried paneer and mix them too. Now add lemon juice to bring in that fluffiness in the pulao. Now the next step is vital. The use of water is very crucial to make fluffy pulao. Add twice the water of the quantity of rice. Also add salt to taste, mix and cover the pan for 10 minutes on medium flame. After 10 minutes open the lid and check for the right consistency of the rice. When it is done perfectly add some ground cardamom, mace and nutmeg, give a proper mix.
