Ingredients: 1. 1.5 Cup Soya Chunks 2. 1.5 tbsp Ginger-Garlic Paste 3. 1.5 tbsp Curd 4. Chopped Coriander Leaves 5. 1/3 tsp Turmeric Powder 6. 1/2 tsp Kashmiri Red Chilli Powder 7. 1 tsp Coriander Powder 8. Salt to Taste 9. 1 tbsp Ghee 10. 2 tbsp Oil 11. 2 Bay Leaves+ 1 Red Chilli+ Whole Spices 12. 1/2 tsp Cumin Seeds 13. Some Ginger Juliennes 14. 2 Chopped Onions 15. 3 Chopped Tomatoes 16. 1/2 tsp Hing 17. 2 Slit Green Chillies 18. 1 tbsp Besan 19. 1 tsp Cumin Powder 20. Water as Required 21. 1 tsp Homemade Garam Masala Powder 22. Some Kasuri Methi 23. Some Sugar
At first soak the soya chunks in hot water for 10-15 minutes and then squeeze the water out of them and them them aside in a bowl. Now we will marinate the soya chunks. Add ginger-garlic paste, some curd, some coriander leaves, turmeric powder, kashmiri red chilli powder, coriander powder, salt and some ghee. And then mix all the things so the masalas are well coated with the soya chunks. After marination cover the bowl for a while.
Now we will prepare the gravy. For that in oil add bay leaves, red chillies and some whole spices. Add cumin seeds ans some ginger juliennes and saute for few seconds. Now add chopped onion and fry it till golden for 2-3 minutes. After that add chopped tomato and some more turmeric powder, hing and slit green chillies. Cook the tomato for 2-3 minutes and let it get soft. After that add some besan and cumin powder and stir fry. Add little water if the mixture gets too thick. Now add all the marinated soya chunks and mix well with the masalas. Immediately add some more water and also some more salt and red chilli powder and let it cook by covering the pan.
After cooking for few minutes add sufficient water and let it cook again by covering the pan. After few minutes when the gravy’s consistency is adjusted add some home made garam masala powder, some kasuri methi and some sugar too. Give them a mix and our Spicy Soya Chunks Curry is ready in an innovative way.
