Ingredients :
1. 300 gm. Maida
2. 1 tsp Sugar
3. Salt to Taste
4. 4 tbsp Oil
5. Water as Required
6. 1 tbsp Chopped Garlic
7. 1 tsp Grated Ginger
8. Chopped Cabbage
9. 1 Chopped Carrot
10. 1 Cup Chopped Beans
11. Slices of 2 Onions
12. 3-4 Chopped Green Chillies
13. 1 Chopped Capsicum
14. 2 tbsp Soya Sauce
15. 1 tsp Green Chilli Sauce
16. 2 tbsp Tomato Ketchup
17. 1/3 tsp Black Salt
18. 1/2 tsp Chaat Masala
19. Chopped Onion & Cucumber
20. Special Masala
21. Lemon Juice

Method

At first take maida in a large bowl and add sugar, salt and 2 tbsp oil in it and mix. Then add water in small quantities time and again to make a soft dough. After kneading for a while when the dough is almost ready, grease it with little oil and keep it aside by covering the bowl for some time.

In the meantime take oil in a pan, heat it and add chopped garlic and ginger and saute them for a while. After that add chopped cabbage, carrot, beans and onion and stir all the veggies for a while. After a minute add salt so that the veggies fry quickly. Don’t over fry the veggies as we need to keep them a bit crunchy. Now add chopped capsicum and mix well. After mixing for a while add all the sauces one by one, black salt, chaat masala and stir on high flame. After a minute our stuffings for the roll is ready. Take it out on a separate bowl.

Now we shall roll rotis from the dough. Take a generous portion from the dough and roll it with a roller. Keep it a bit thin. Now roast the roti on a tawa without oil. When it is a bit roasted add oil and fry the roti evenly from both sides. When take it out on a flat surface. Now take few tablespoon of the vegetable stuffings and place it in the middle of the roti. Add chopped onion, cucumber, lemon juice and a bit mixed masala on the stuffings. Now roll the roti from one side. Wrap the roll with a paper to give it a street side look. Make all the rolls in the same way from the entire dough.

Now give it a bite and enjoy its spicy, crispy, tangy taste.
